Einkorn is the original wheat, genetically pure and just as nature intended. It is quickly becoming the wheat of choice among the gluten sensitive due to its very weak gluten. Crafted in small batches by passionate Italian artisan bakers using einkorn, these Italian-style checkerboard cookies are lightly sweetened and completely satisfying, without being overly rich. Patchworks of chocolate and vanilla shortbread are perfect on their own or dipped into your morning coffee or afternoon tea.
