Ingredients
Paprika, Chili, Garam Masala (Coriander, Cinnamon, Cumin, Ginger, Cloves, Cardamom, Black Pepper), salt, Coriander, Cumin, Dried Fenugreek, Dry Garlic, Ginger.
Preparation
1. Cut the chicken (500 grams) into cubes and marinate with SPICE PACK 1, and plain yogurt (4 tbsp) for 30 minutes to overnight.
2. Slice the onion (1 medium) and dice the tomatoes (5 medium sized). Use soft ripe tomatoes.
Cooking the dish
1. Pre heat oven to 400 F and bake the marinated chicken for 20 minutes. Optional: Broil 1 to 3 minutes in the end to add a charred tandoori BBQ texture.
2. In a pan over medium heat, melt butter (2 tbsp) and the fry sliced onions (1 medium) for 2 minutes until it's soft and translucent.
3. Add SPICE PACK 2 and stir for 30 seconds.
4. Add the diced tomatoes (5 medium sized) and cook for 1 to 2 minutes. It should start to boil.
5. Add warm water (1 cup), cashew nuts (20 pieces) cooked covered for 5 minutes, until half of the water has evaporated.
6. Carefully blend the gravy with a hand blender into a smooth sauce. Important Note: If you are using a regular blender, please be very careful. Cool down the sauce before blending if necessary. If you cool it down, just heat it up after.
7. Over low heat, add the sauce back into the pan along with warm water (1/4 cup). Stir for 2 to 3 minutes
8. Add sugar (2 tsp), SPICE PACK 3, and butter (2 tbsp, optional).
9. Adjust the Heat Level to your liking by adding HOT CHILI PACK. Best enjoyed medium to hot spicy. Be Careful, this spice is HOT!!!
