Sauerkraut Kale Kimchi

This recipe closely follows the traditional Korean formula, starting with Napa cabbage as the base. We then add three bushels of certified organic kale to each batch, resulting in a slightly spicier version compared to original Organic KimChi.

Each batch is barrel-fermented and hand-packed into glass mason jars, using only 100% pure Himalayan pink salt.
